A Coronation Picnic party fit for a King!

There will be lots of community celebrations planned for the coronation of His Majesty King Charles and Her Majesty The Queen Consort on 6th May.

Whether you are in the garden or at community events it is sure to be a great day for picnicking!

 

What more could you want at a picnic party than a classic homemade Victoria sponge, here is a delicious recipe that I use regularly with my daughter at home.

Ingredients:

  • 200g Caster Sugar
  • 200g Soft butter
  • 4 Eggs
  • 200g SR Flour
  • 1tsp backing powder
  • 2tbsp milk

Butter cream & Jam filling:

  • 100g soft butter
  • 140g icing sugar plus extra to decorate
  • A drop of vanilla extra
  • Strawberry Jam 

How to bake:

  1. Beat the caster sugar, butter, eggs, flour baking powder and milk together in a large bowl to form a smooth batter.
  2. Divide the mixture between tins (dont forget to butter and line your tins)
  3. Bake for 20 minutes or until golden on the top, leave to cool.
  4. to make the filling, beat the butter until smooth then gradually add icing sugar and vanilla extract.
  5. Spread the butter cream over the sponge and then top with jam before sandwiching the sponges together.
